low carb pork & noodles in spicy peanut sauce
Pork and noodles in peanut sauce

This amazing keto-friendly dinner was another evolution of a carb heavy version I made years ago.
Ingredients
- 1 tablespoon olive oil
- 3-4 cloves of garlic, minced
- 1 pound of pork, diced up
- 2 cups of broccoli cut into florets
- 1 tablespoon of red pepper flakes
- 1/4 cup of low sodium soy sauce (I use Kikoman's)
- 1/4 cup no salt peanut butter (I use Teddie's)
- 3 bags of shirataki noodles (I use Pasta Zero), drained and rinsed
Instructions
- Heat olive oil and add garlic. Stir for 1-2 minutes until fragrant
- Add pork and cook nearly through
- While pork is cooking, mix soy, peanut butter and pepper flakes to form a paste
- Add noodles and put lid on pan to heat noodles through
- Add broccoli and paste. Put lid on to soften broccoli and paste
- Once the broccoli are nearly cooked, stir together to coat pork, beans and noodles. You will not be able to do this before the peanut butter warms up.
- If there is a lot of water in the pan from the beans and noodles, you can turn the heat up to cook this off.
- Serve up in a bowl and enjoy!

54.43 mgYou can add less red pepper flakes, if you don't like the heat, but I don't recommend adding more. My husband did this once and it was so hot it was nearly inedible. We also use garlic infused oil, which adds another layer of deliciousness to this dish.
