keto bbq chopped chicken salad
This salad is as easy as it is delicious. I had a version of this at a local restaurant, but this version is low carb using sugar-free BBQ sauce and low carb tortilla strips.

Using this sugar-free barbecue sauce makes this salad keto friendly and delicious.
Ingredients
- 1 pound of chicken (breast or tenders), cooked, cooled and diced
- 1 Mission Carb Balance tortilla
- 3 tablespoons of G Hughes Smokehouse BBQ Sauce
- 1 head of romaine lettuce, chopped
- 1/2 head of iceberg lettuce, chopped
- 4 campari tomatoes, diced
- 2 scallions, diced
- 1/2 of an English cucumber, diced
- 1/4 jar of roasted red peppers, diced
Instructions
- Roast chicken in oven until cooked through
- Cool the chicken and dice
- Slice the tortilla into strips, toast until crisp
- Toss diced chicken in BBQ sauce, set aside
- Add all vegetables to a large bowl, add chicken, toss.
- Put a layer of crispy tortilla strips on top
- Serve and enjoy!
Notes
You can add BBQ sauce to the chicken before cooking or marinate it overnight, but that will change the carb level. We also added avocado to our salads.
